Birthday Cake Protein Truffles

Happy birthday! Oh, it’s not today? That’s okay. Everyone deserves a truffle-sized bite of cupcake once in a while. Go heavy-handed on the protein powder to really satisfy your cravings. You won’t feel anywhere near the remorse of a store-bought dessert with this recipe. Plus, these no-bake treats promise no face-planting sugar crashes. That’s something to celebrate, right?

Protein Birthday Cake Truffles

Be sure to pick up coconut butter instead of using coconut oil. You’ll notice a big difference in texture.



2 scoops vanilla cupcake protein powder
2/3 cup coconut flour
1/2 cup coconut butter
1/2 cup unsweetened almond milk
1/2 cup raw honey
Rainbow sprinkles (optional but not really)


  1. In a large bowl, combine all ingredients except the sprinkles. Add the almond milk slowly to get the perfect smooth and creamy texture you would expect in a truffle.
  2. Roll dough into balls.
  3. Coat the balls with lots and lots of sprinkles.
  4. Party like it’s your birthday and enjoy!
