Sweet Potato Fries

French fries with zero grams of fat? That’s the magic of oven-baking and using creative, healthy substitutions for the usual heavy oils. In this recipe, sweet potato wedges are tossed with pure vanilla and a light sprinkling of cinnamon, then baked to crispy, chewy perfection. Not only are they packed with fiber, vitamin C and potassium, an entire serving contains just 144 calories!

These crave-worthy fries are sprinkled with cinnamon and stevia for naturally sweet flavor.

Ingredients

1 large sweet potato
1 large egg white (beaten lightly)
½ tsp. vanilla extract
¼ tsp. cinnamon
¼ tsp. low-calorie sweetener

Directions

1. Preheat oven to 425 degrees F.

2. Cut sweet potato into even slices. Place slices into a container or re-sealable bag, add remaining ingredients and shake to coat.

3. Place coated slices on lightly greased baking sheet and sprinkle with additional cinnamon and sweetener (if desired) for more even coating.

4. Bake for about 25 minutes until golden brown.
