Chocolate Cake for One: Easy, 2-Minute Recipe

Not your birthday? That’s OK. You don’t need a special occasion to splurge on this chocolaty oatcake, drizzled with healthy Greek yogurt, natural chocolate syrup, sweet strawberries and chewy granola. It’s made in minutes, in a mug—just enough to satisfy your sweet tooth without leaving extra slices to tempt you for days.

Recipe: Chocolate & Strawberry Oatcake

 Ingredients

1/3 cup rolled oats
1/4 cup almond milk
1 egg white
1/4 tsp baking powder
1 tbs cocoa powder
1 + 1/2 Tbsp. Stevia
1/2 cup diced strawberries
1 Tbsp. chocolate syrup
Optional: Greek yogurt, granola

Directions

1. In a small bow, combine all ingredients, except strawberries; mix well.
2. Coat the inside of a coffee mug with non-stick cooking spray.
3. Pour batter into mug and microwave for 1 to 1-1/2 minutes.
4. Let cup cool before handling. Turn mug over onto a plate. The cake should slide right out!

5. Top cake with chocolate syrup and strawberries, or your fruit of choice, Greek yogurt, or granola.
