Fruit salad may seem like a no-brainer, but coating sweet cherry chunks, crisp apple cubes and thinly sliced bananas with a light vanilla-agave glaze cleverly transforms a simple breakfast into a dessert-worthy indulgence. Serves 4

Ingredients

2 large apples, finely chopped
1 large banana, thinly sliced
1/2 lb. cherries, pitted and chopped
1 Tbsp. agave nectar
14/ tsp. organic vanilla
4 gluten-free rice cakes

Directions

1. In a large bowl, combine fruit with vanilla extract and agave nectar; gently toss to combine.

2. Top each rice cake with fruit mixture and serve.
