Spice up your Cinco de Mayo Celebration

Cinco de Mayo is just around the corner. Are you ready to celebrate? Spice up your fiesta with these (easy!) flavorful recipes from Vitacost.com:

Fiesta Bean Dip

Ingredients:

1 15.4-oz can vegetarian refried beans

1 8-oz pkg cream cheese, softened

1 16-oz jar chunky salsa

1-1/2 cups Mexican blend shredded cheese

1 tsp cumin

Blue or yellow corn tortilla chips

Directions:
Preheat oven to 350⁰. Spray 9″ pie dish with cooking spray. Mix cumin into beans. Spread cream cheese, then a layer of beans in dish. Cover with salsa. Bake for 30 minutes; sprinkle on cheese and bake for additional 10 minutes until cheese is melted. Serve with tortilla chips.

Frozen Virgin Mango Margaritas

Ingredients:

1 16-oz pkg frozen mango slices

1/3 cup frozen limeade concentrate, thawed

1 1/2 cups water

Coarse salt

Lime or orange slices for garnish

Directions:

Add mangoes, limeade and water to blender or food processor and blend until smooth. Rub glass rim with lime wedge; dip in salt. Pour mango margarita into glass and garnish with fruit slices.
