Banana Chia Pudding

Good thing bananas come in a bunch. You’ll be happy you have a few on hand after trying this quick, nutritious pudding! Simply blend a banana with a cup of coconut milk, a scoop of chia seeds and some cinnamon, chill for about an hour, and you’ve got the perfect single-serving dessert–sweet, creamy and (bonus!) packed with potassium, protein and omega-3s.

Banana Chia Pudding

Serves 1

Ingredients
1 banana
1 cup of coconut milk or almond milk
1 Tbsp. chia seeds
1 to 2 tsp. cinnamon

Directions

1. Combine all ingredients in blender. Blend until smooth.

2. Refrigerate pudding for at least an hour before serving.

    Looking at this recipe it seemed it would not be thick. I tried it anyway and it is more of a smoothie, not a pudding.
