If you’ve got some extra brown rice leftover from last night’s stir-fry dinner, today’s breakfast is going to be a breeze! Stir in a scoop of almond butter, some applesauce, a pinch of cinnamon and a few other simple ingredients for a delightful, belly-warming bowl of porridge. Top with fresh berries for added antioxidants and sweetness.
Brown Rice & Berry Porridge
Serves 1 to 2
½ cup cooked brown rice
1-2 Tbsp. unsweetened applesauce
1 Tbsp. almond butter
1/3 cup unsweetened almond milk
1 tsp. cinnamon
½ tsp. nutmeg
1 tsp. almond extract
2 Tbsp. flax meal
2 Tbsp. hemp protein powder
Fresh berries or banana slices (optional)
1. In small saucepan, combine all ingredients.
2. Heat mixture over low heat until warm.
