Cherry-Vanilla Macaroons

The French have le macaron, the crunchy, pastel-colored sandwich cookies you see in the most upscale bakeries. Though tasty, they’re nothing like an American macaroon. You know the macaroon as a light-and-airy coconut delight. But this recipe has even more pride than that with its cherry-pie-like flavor which is baked to perfection and then dipped into dark chocolate.
