Crunchy celery, diced apples and sweet, cool grapes create burst-in-your-mouth texture and gourmet flavor, while dairy-free mayo keeps the fat content low.
1 pound cooked boneless, skinless chicken breast
3/4 cup vegan mayonnaise
1 Tbsp. spicy mustard
1 Tbsp. finely chopped fresh cilantro
1 large red apple, chopped
2 tsp. lemon juice
3 stalks celery, chopped
2 cups green grapes
4 cups mixed salad greens
Sea salt and pepper, to taste
1. Combine all ingredients in a large bowl; mix well to combine.
2. Serve chicken salad chilled.
