Creamy Cacao-Coconut Pudding
Chocolate cravings sometimes hit hard. When nothing can stop you, blend up a batch of this guilt-free, dairy-free pudding. Its creaminess comes from a “surprise” healthy ingredient: silky-smooth, whipped avocado! Mix in raw cacao and coconut for rich flavor, plus a sprinkle of cinnamon and vanilla for natural sweetness.
Creamy Cacao-Coconut Pudding
Serves 6
Ingredients
1/2 cup unsweetened cacao powder
2 avocados
6 dates (pitted)
2 Tbsp. chia seeds
1/3 cup unsweetened almond milk
2 tsp. cinnamon
2 tsp. cayenne (optional)
1-1/2 Tbsp. coconut cream (use top layer of cream in canned coconut milk)
2 tsp. vanilla
Directions
1. Combine all ingredients in blender and blend well.
2. Enjoy!

Mo, have you a good, foolproof recipe for GF pastry? I want to do some holiday baking but the crusts have me flummoxed! Also can you recommend any good GF bread mixes for bread machine? Two people have given me older model breadmakers so the recipes don’t accommodate GF. Any tips appreciated!
