Creamy Cilantro Coleslaw
1/2 cup plain Greek yogurt
2 Tbsp. finely chopped fresh cilantro
2 Tbsp. finely chopped fresh parsley
1 scallion, thinly sliced
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
2 cups organic mixed greens
1. In a large bowl, combine yogurt with herbs, scallion, sea salt and pepper; add mixed greens.
2. Gently toss to combine.
