Jumbo Oatmeal-Flax Breakfast Cookies

With a sweet tooth like mine, cookies and cakes are welcome on my breakfast plate any time. But not just any old confection will do. Of course I want my morning meal to be nutritious, filling and—considering my jam-packed schedule—convenient. But a little sweetness makes it complete! Here’s a recipe that meets every requirement, and one that should absolutely fill your cookie jar if skipping that morning meal has become one of your not-so-healthy habits. Packed with oats, flax, banana, coconut and  cacao nibs, these cookies are the perfect grab-and-go bite to keep energy levels up and diet crankiness down during the early hours of your day. Make yours smaller if you want to enjoy them as a snack or after-dinner treat.

Oatmeal-Flax Breakfast Cookies

 

Jumbo Oatmeal-Flax Breakfast Cookies

Makes 10 large cookies

Ingredients

1 cup rolled oats
1 cup whole wheat pastry flour
2 Tbsp. flax meal
1/4 cup powdered peanut butter + 3 tbsp. water, mixed
½ cup natural sweetener such as stevia
½ tsp. cinnamon
1 tsp. baking soda
2 ripe bananas
2 large egg whites
2 tbsp. coconut oil
1 tsp. vanilla extract
1/4 cup unsweetened shredded coconut
1/4 cup cacao nibs or chocolate chips

Directions

1. Preheat oven to 350 degrees F. Spray cookie sheet with non-stick spray.

2. In a large bowl, combine bananas, egg whites, coconut oil and vanilla. Mix well, mashing bananas.

3. In another large bowl, combine dry ingredients, placing coconut and cacao nibs on top.

4. Pour wet mixture over dry mixture and mix well.

5. Spoon 10 cookies onto baking sheet using a 1/4 cup measuring cup; press down to flatten and shape into round shape with spoon if desired.

6. Bake for 10 to 13 minutes.

Nutrition info per cookie: 180.2 calories, 8.1 grams fat, 24.5 grams carbs, 5.4 grams protein, 3.4 grams sugar
