Lean Green Protein Smoothie

Going green in 2014? Start with this sensational smoothie, teeming with healthy greens, protein-packed seeds and a scoop of creamy almond butter. Freezing veggies first means no need for ice””nothing but pure, dense nutrition and loads of fresh flavor in this frosty, drinkable treat!

Lean Green Protein Smoothie

Serves 1-2  

Ingredients

1 scoop vegan pea protein powder
½ cup frozen chopped zucchini
¾ cup frozen kale (stems removed)
2 tsp. chia seeds
2 Tbsp. flaxseed meal
1 Tbsp. almond butter  (optional)
¼ – ½ tsp. chipotle powder, to taste
1/3 of a lemon rind
1 Tbsp. chopped basil
¼ to 1/3 cup water (more or less, depending upon desired consistency)

Directions

1. Combine all ingredients in a high-speed blender. Blend until smooth.
