Vegan Nutty Protein Spread

Vegan Nutty Protein Spread

Serves 1-2

Ingredients

1 scoop non-soy vegan protein powder
1 Tbsp. nut butter of choice (almond, cashew, peanut)
1/2 zucchini, chopped
1 Tbsp. lemon rind
1/4 cup water

Directions

1. Combine all ingredients in blender; blend smooth.

2. Serve at room temperature or slightly warmed.

    I’ve been working on having healthy snacks and want to have vegetables when ever I can. This is perfect with the veggie blended in, my favorite nut butter and I don’t think I would have thought to add the protein powder nor the lemon zest. Maureen, do you think this would store okay to be eaten over a couple of days or preferably a week?

      Oh yes, the only protein powders I’m doing right now have spirulina, chlorella and powdered herbs and fruit. I’m assuming that is not the type you are talking about. I’m looking to keep my sugar intake low and maximum nutrition can you give me an idea of a protein powder with what type of ingridients that would go well with this recipe?
