Pumpkin Pie Smoothie

Having a hard time finding your favorite pumpkin beverage at the coffee shops? Try something cooler, made right at home in your very own blender. Sweet, spicy and satisfying, this Pumpkin Pie Smoothie is made with the healthiest of ingredients: organic pumpkin, creamy almond milk, rich almond butter and pure vanilla. For an extra-thick, shake-like consistency, freeze pumpkin purée before you mix it in!

Make a thicker, “shake-like” smoothie by freezing pumpkin before adding it to your blender!

Pumpkin Pie Smoothie

Ingredients

½ (15 oz.) can or ½ cup mashed pumpkin*
½ cup unsweetened almond milk
1 Tbsp. almond butter
¼ cup mashed carrots or sweet potato*
1- ½ tsp. vanilla
1 tsp. cinnamon (or more, to taste)
½ tsp. nutmeg
½ cup crushed ice cubes
Optional: 1 scoop vegan vanilla protein powder


Directions

1. Blend all ingredients in a high-speed blender until smooth.

* For thicker, shake-like consistency, freeze pumpkin and mashed carrots/sweet potatoes before blending.

 

Nutritional information, without the optional protein powder:

178 calories, 15 carbs, 10 grams of fat, 5 grams of protein, 90 grams of sodium and 5 grams of sugar

With added protein:

288 calories, 15 carbs, 12 grams of fat, 25 grams of protein, 93 grams of sodium and 5 grams of sugar

    I love pumpkin, but the flavored coffee drinks have never been my thing. Now THIS is a recipe I can enjoy!

    Will try this with coconut milk and coconut butter, which are much lower in oxalic acid.

    Hi, I made this using 1/2 c can pumpkin and 1/4 c cooked sweet potato, both frozen first. It was hard for my Blendtec to mix the frozen lumps of vegetables. Should I have frozen in ice -cube tray size instead? Thanks!
