Raw Chili-Mint Zucchini Salad

Not sure if a raw diet is right for you? This salad may sway your decision. Thin ribbons of zucchini are marinated in a mixture of tangy rice vinegar and lime juice, then seasoned with spicy chili flakes and cooling mint leaves for a zesty, refreshing side dish. It stands well alone as a salad or makes a healthier replacement for the usual mayo-drenched coleslaw.
