Roasted Chipotle Sweet Potato Wedges
You’ll forget all about white potato, deep-fried French fries with a stack of these spicy spuds next to your burger. Thick-cut sweet potato wedges are tossed with fresh lime juice and fiery chipotle pepper powder, then baked to a crispy-chewy finish for a healthy side dish with a kick. For extra flavor, add chopped, fresh parsley to the mix and serve with a cool, creamy-style dip.
Roasted Chipotle Sweet Potatoes
3 to 4 medium sized sweet potatoes, cut into wedges
3 to 4 tsp. ground chipotle pepper, to taste
Coconut oil spray or non-stick coking spray of choice
Juice of 1 lime
2 Tbsp. fresh parsley, chopped
1. Preheat oven to 350 degrees F. Lightly spray baking sheet with coconut oil spray.
2. In a large bowl, toss sweet potato wedges with remaining ingredients, making sure to evenly season.
3. Place wedges on baking sheet and bake for 20 minutes or until desired crispiness.
