Spinach & Artichoke Stuffed Chicken

4 chicken breasts, boneless and skinless
1 cup low-fat cottage cheese
1 (packed) cup baby spinach
1/2 (14 oz.) can of quartered artichokes, drained and rinsed
1 Tbsp. nutritional yeast
1/2 tsp. minced garlic (or 1 garlic clove, minced)
Salt and pepper, to taste
1. Preheat oven to 375 degrees F. Prepare baking sheet with non-stick spray.
