Rich, chocolaty pudding made without dairy or eggs? You bet! In this recipe, ripe avocados are blended with smooth peanut butter, chocolate protein powder and a dash of almond extract for a sweet-and-creamy vegan dessert. Serve chilled, topped with fresh berries or chopped nuts for garnish.
Vegan Chocolate Pudding
2 ripe avocados, peeled, pitted and diced
1/2 tsp. almond extract
4 large dates, pitted
2 Tbsp. chocolate protein powder
1/2 tsp. sea salt
2 Tbsp. creamy peanut butter
1-2/4 cups water
1/4 cup pistachios, finely chopped
1. Combine all ingredients in a blender; pulse until smooth.
2. Refrigerate for 2 hours before serving.
3. Serve chilled.
