Use your leftover spuds to make a dish that’s been satisfying hungry families for centuries: shepherd’s pie. Once known as “cottage pie” (because of its popularity in rural areas), shepherd’s pie is a layered casserole that typically includes mashed potatoes, ground beef, carrots and peas. With this recipe, you can make your pie with or without meat and include whatever veggies you have on hand.

Vegan baked goods often have a bad rap—turn out one “off” batch and no one will want to touch your “crumbly and dry” dairy-free desserts again. When it comes to cornbread—which can bake up dry even with dairy in the mix—making a moist, cake-like confection is tricky. I played around with a basic recipe to find the perfect blend of ingredients, which includes homemade flax “eggs,” rich coconut oil and your choice of maple syrup or agave.
Popcorn is a perfect light, crunchy summertime snack. Plus, it only costs about 16 cents per serving—you can’t beat that when you’ve got a bunch of hungry kids hanging out at home. Rather than oil and the traditional stovetop method, I like to use an air popper, which I place outside to keep the heat (and the kids) out of the kitchen. After popping up a big batch, I sprinkle on one of my homemade seasoning blends to transform boring, plain-old puffs into a super satisfying sweet or savory snack.

No matter how much we try to avoid it, there are days when your family will need to eat “on the run”—whether it’s a snack while heading to soccer practice or dinner between said soccer practice and the school open house that immediately follows. Rather than resorting to junky fast food or expensive take-out, you can easily pack healthy, whole foods that satisfy hungry tummies and nourish active bodies away from home. All it takes is a little planning and creativity.
Is there a picky eater in your family? A vegetarian? A vegan? Everyone can be happy at dinner on taco night! Start off by sautéing some veggies—use fresh favorites or take this opportunity to “clean out” your refrigerator’s produce drawer. From here, you can go meatless or brown up some beef or buffalo meat—your choice. Serve with seasoned brown rice and toppings your troop loves! I like to lay out whole wheat tortillas, local raw goat cheese, avocado, shredded cabbage and chopped tomato.
