My favorite salad contains artichoke hearts as the main ingredient, but I recently only learned of the many possible health benefits of including these spiny little plants in a regular diet. Artichokes are an excellent source of dietary magnesium, fiber, and the trace mineral chromium. They are full of vitamins A and C, folic acid, biotin, niacin, riboflavin, thiamine, potassium and trace mineral manganese.
The artichoke has been utilized for its healthful benefits since the 4th century B.C. Today it is used as an antioxidant. It is also believed to support healthy digestion, liver function, and cholesterol levels already within normal range.
